LAZY DAISY CRAZY

AH I have had total blog neglect since last week. I just couldn't force myself to get on the computer this weekend and do anything.  Been doing a little spring cleaning and lots of laundry and getting ready for the boys dad to visit next weekend.
The weather can't decide around here if it's time for Spring cleaning or we should still be hibernating. It is frustrating.  My sinuses are killing me.  My heater is about to smack me across the face cause I keep turning it off and on.......AND I have been battling ants who have specifically chosen my house to invade at the moment.
So this weekend I spring cleaned while it snowed outside and went to battle with the ants trying to move in.  I believe I have won that battle and my kitchen looks awesome.

I also took the little RePeat to see Toy Story 3 on Ice. Sorry for the crappy pictures.  These are on my cell phone.  They don't allow detachable lens cameras in this facility so.............crappy pictures it is.
RePeat & I had a blast.  It was such an adorable show.

 He sat through the whole thing eye balls huge and loved it. He also talked me into hot dogs, drinks, cotton candy, a Buzz Lightyear action figure, and a Toy Story sword. I'm a sucker. It was fun.



In between the snow spurts P-Nut found some time to skateboard.  I tried to snap a few shots of him.  My poor camera has become neglected lately.




I know he is ready for it to warm up for good so he can practice his mad skateboard skillz.

So that is why I have been so blog lazy daisy crazy. I'm behind on my 31 Days & my posts & my recipes, & etc, & etc.  I'm going through I don't want to jack with the computer unless I have to at work kind of phase.  I look at my laptop at home & just shrug & walk off.   I'll get back on soon enough.

NEW RECIPE A WEEK

CHEESE TOASTIES FOR TWO
Ingredients

1 c grated cheddar cheese (I have used whatever I have on hand many a time, cheddar is my favorite)
 ¼ c mayonnaise
1 large clove garlic, minced
2 t to 1 T chipotle pepper in adobo (or pickled jalapenos if you don’t have chipotle)
1 t rum or cognac
1 t Dijon mustard
2 large slices bread (or 6 slices of baguette)

Toast the bread.  Mix the rest together and spread on the toasted bread.  Put under the broiler until brown and bubbly. Cut into ½ or ¼ size pieces and eat with gusto.

31 DAYS - DAY 03

Day 03 - A picture of the cast from your favorite show



I love this show. It just cracks me up. It's my stress reliever. I could watch one episode half a dozen time. I love the one liners & quirky crap they do. Fun, Fun, Funest show ever.

My runner up shows that I also love love love are Californication, Weeds, & Entourage.

MEAL PLAN MONDAY

Refried Bean and Beef Enchiladas

Ingredients


For the enchilada sauce:
• 2 tbsp butter
• 1 tbsp olive oil
• 3 tbsp flour
• 1 tbsp paprika
• 2 x chipotle chillies packed in adobo sauce (optional)
• 2 tsp adobo sauce (from the can of chillies, optional)
• 2 cups (500ml) vegetable stock
• ½ cup (250ml) water
• ¼ cup (55g) tomato purée
• 30g dark chocolate
• Salt, to taste

For the beef and bean filling:
• 1 tbsp olive oil
• 1 medium onion
• 3 x cloves of garlic, minced
• 1 tsp hot chilli powder
• 3 tsp paprika
• 3 tsp oregano
• 1 tsp parsley
• 500g ground beef
• 1 x tin (435g) refried beans
• Salt and pepper
To finish:
• 6-8 flour tortillas
• Cheese (I used cheddar and mozzarella)
• Salad (i.e. varied lettuce and spinach leaves) and/or fresh coriander
Preparation
For the enchilada sauce:
Heat butter and olive oil over medium heat in a saucepan, and add the flour and stir until a roux forms.
Add the paprika and cook for a further minute.
Then, add the water, vegetable stock, tomato paste and chocolate. If using the chillies, remove their seeds and mince them before adding them, with the adobo sauce, to the mix.
Simmer until the mixture is thick and bubble. If you’re having trouble dissolving the roux, bring to the boil for a while and press it against the sides.
For the filling:
Cut the onion and mince the garlic.
Add 1 tbsp oil to a large pan/pot, and then add the garlic and onion and cook until the onions are soft, but not brown. Then add the paprika and hot chilli powder, and cook for a further minute or so.
Then add the minced beef, and brown all over. Continue cooking until it’s done.
Throw in the refried beans and a third of the enchilada sauce, and mix well.
Putting the enchiladas together:
Preheat the oven to 190◦C.
Ladle half of the remaining enchilada sauce and spread on the bottom of a large baking dish.
Then pop a dollop of the beef mixture in the middle of a tortilla (make sure there’s an even amount for each one), and spread all around. Roll the tortilla up (like sushi) and place it into the dish, making sure the seam is side down.
Do this for all tortilla, and pop them in the dish; you may have to put a few on top of each other, but that’s ok.
Cover the tortilla with the remaining enchilada sauce, and sprinkle with as much cheese as you want. I used mozzarella and cheddar.
Pop into the oven for 20-25 minutes until the cheese is golden and bubbling.
Sprinkle with fresh coriander leaves and serve with salsa, guacamole and sour cream!

31 DAYS - DAY 02

Day 02 - A picture of you and the person you have been closest with the longest

The Sisters of the Perpetual Saturday:

I found this one kind of hard cause I kind of phase in and out of closeness with people that have been in my life for a long time. I guess the longest would be the sisters. If you add up all the closeness over time they would be the winners. 
Other runners up would be my parents of course, and my longest closest friend Kel-Kel. There are other wonderful people in my life and wonderful people who have already come and gone out of my life. I am grateful for all the close relationships I have been granted to have.

31 DAYS - DAY 01

Day 01- A picture of me with ten facts.

1. I can spend hours digging through thrift stores. I love looking through every rack at material and patterns and sizes.
2. I read about 5-6 books at a time.
3. I like to rearrange rooms in my house like once a month. It makes me feel refreshed.
4. I am a recipe hoarder. I have annoying stacks of recipes printed and torn out of magazines. I keep trying to organize them but I just keep moving the pile from room to room.
5. I love pulling splinters out of people. With tweezers.
6. I love cleaning. Like really deep cleaning/scrubbing. It lets my brain wonder and think and organize all the thoughts in my head.
7. I love old people. I love working with old people. I love to hear their stories of when they were younger and look at their pictures. People just brush old people aside & forget that they had a whole entire life of stories and adventures. I would like to do a photography book of old people that includes an interesting story they told me. One woman I met her father was a preacher in Oklahoma and he was at his church late at night working on his sermon for the following Sunday & a man walks in his church. He talked with & prayed with the young man before helping him take back ways to get to his mother's house to see her because the cops were after him. The young man was Pretty Boy Floyd.
8. If I didn't have children I think I would just be a wanderer. Traveling around taking pictures of everything I saw & did doing odd jobs to get money to just get to the next place I wanted to go. A Gypsy of sorts.
9. I was an accident....urh a surprise my mom says. My brother & sisters are 17, 15, & 13 years older than me. My parents were 37 & 39 when they had me. When I was younger I knew my parents were older than other kids parents & I used to obsessively worry myself to hysterical crying that my parents would die before I was grown. 
10. When I wake up from a nap I always want chocolate ice cream.
BONUS:
11. After almost 35 years I finally about 6 months ago stopped biting my nails. I repaint my nails & toes every week. with it being winter I sometimes get lazy with my toes and just paint over the previous color. At times i will have 3-4 color layers on my toes.
